Ingredients:
4 fish fillets (such as tilapia, pomfret, or any white fish)
1 tbsp lemon juice
1 tbsp ginger-garlic paste
1 tbsp red chili powder
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp ajwain (carom seeds)
1 tsp ground cumin
1 tbsp mustard oil (or vegetable oil)
Salt to taste
1-2 tbsp vegetable oil (for grilling)
Fresh coriander (optional, for garnish)
Lemon wedges (for serving)
Instructions:
Prepare the marinade: In a bowl, combine lemon juice, ginger-garlic paste, red chili powder, turmeric powder, garam masala, ground cumin, ajwan, mustard oil, and salt. Mix well to form a smooth paste.
Marinate the fish: Coat the fish fillets evenly with the marinade. Cover and refrigerate for at least 30 minutes to 1 hour for the flavors to infuse.
Prepare the grill: Preheat the grill to medium-high heat (about 375°F/190°C). If using a grill pan, heat it on medium-high on the stovetop.
Grill the fish: Lightly brush the grill or grill pan with vegetable oil to prevent sticking. Place the marinated fish fillets on the grill and cook for 4-5 minutes per side, depending on the thickness of the fish. The fish should be cooked through and have a nice char.
Serve: Once grilled, remove the fish from the grill. Garnish with fresh cilantro and serve with lemon wedges on the side. Pair with naan, rice, or a fresh cucumber salad for a complete meal.
