Come back and visit between now and New Year's for more pictures and videos, if you'd like. Hugs and Merry Christmas to you!
Let's get warm! Aww, the heat is on, and we're so much toastier than last year. Oh yes, we got a new heating system, and it’s awesome. During the summer, the system will cool us like air conditioning. This heating upgrade is the most recent thing we’ve done this year.
Hey, Cozy, come over here. Ball? OK, I’ll toss it. Hey, why don’t you put it in the throwing machine? We’ve got you. No, we still haven’t trained you yet, but I know you love it. You see, everyone, she will sit and cry a little when she wants something— even dinner. She knows the timing is crazy, but I love it. She’s brilliant.
She is doing great. We have her tagged now with locators so we can find her using either Android or Apple. She is as sweet and fun-loving as always.
Aww, coffee is ready! Yup, still can’t have a day without it. Hey, I’ve given up beef, sugar, too many carbs, and so on, but not my coffee. Hehehe.
Jonathan is working on his part of the newsletter as I write. We both have lost a lot of weight this year and are very happy. It truly is awesome.
Oh, everyone, please don’t forget the birds! We have one living in our carport again. Every year, at least one bird makes a home in the eaves. She wakes us up, yelling at the crows outside the window. They usually have babies and then leave in the spring. I feed the birds all winter. The critters around here are wonderful—one of the best things about living out here. Turkeys, bears, foxes—oh my! Hehe, we love them all. Jonathan is on the board for our little community and stopped them from capturing the foxes that live here and relocating them. He convinced them that the foxes help control other rodents that might be around from the woods.
The cold is awful this year. The weather takes me back to my childhood, when we really did have snow in November. I love how pretty and magical the snow looks when it first falls—fresh on the trees and ground, untouched. It’s spectacular. Unfortunately, I wasn't able to put up as many lights and decorations this year because it was too cold and icy to do so. But the snow is still beautiful. It’s a week before Christmas, and we still have a couple of inches of icy snow outside.
I've been cooking a lot lately! Oh, and a few of my Mom's and my recipes are linked below. I did discover something this holiday that might be helpful for those of you with diabetes or anyone dieting. Did you know that the regular oatmeal we've been buying all these years in the round box for breakfast, cookies, and so on has spiked my blood sugar to unbelievable levels? I didn’t realize it until I tried plain oatmeal one morning and then checked my sugar before and after. Holy moly! Steel-cut oats (not quick oats) are what you want instead.
Also, we like keto bread, muffin mixes, and cereals—they're pretty good! But cookies and cakes tend to be dry... we're still learning.
Anyway, my mom's stuffing, pies, soups, and other recipes are linked here: [Mom's Holiday Recipes] or [Mom's Soups and Stews with Leftovers].
Need some fast cookies? Try cake box cookies—just look them up online! Using box mixes can be a lot of fun, and they even have sugar-free mixes that use alternative sweeteners. They taste so good! Here’s one of Jonathan's favorites: my peanut butter cookie recipe.
