CASSAVA CAKE RECIPE
1 to 1.5lb cassava, peeled boiled, mashed, remove any fibrous roots. let cool
you can also use grated or frozen.
8 tsp white sugar
1 can condensed milk
1 can evaporated milk
1 can coconut cream
1 14oz bag grated coconut(goya if u can find it) unsweetened
4 large whole eggs
use a blender to blend all ingredients till smooth. bake in two 9x9 greased pans until light brown on edges and custard has set
@ 350f for 50-60 minutes depending on oven and cake pan thickness, broil for last 5 minutes with coconut or nuts for crunchy topping.
i cook mine for 65 minutes in glass pans
let cool, serve cold. freezes well.
