But JPEG, PSD, etc all are acronyms which is why they are capitalised. RAW (oops... raw) isn't - it is just the "raw data" i.e. the untouched, unprocessed data out of the sensor. So it would make sense to just say "I shoot in raw" rather than "I shoot in RAW", but as already speculated, this tradition has probably arisen from people listing other formats capitalised.
