Research outcome
My research background includes over 10 years of experience in conducting research and supervising undergraduate research projects. My research focuses on food lipid chemistry (oil structuring, oxidation of edible oils, trans fat and fatty acid profile analysis of foods), antioxidants, extraction and characterization of phytochemicals/ bioactives from plant sources, and development of bioplastics from food wastes.
I acquired hands-on experience in wide range of food analysis techniques including basic food analysis, chromatography (column, thin layer, GC MS, LC-MS), mass spectrometry, spectroscopy (UV-visible, FTIR), physical properties analysis (rheology, thermal analysis (Differential Scanning Calorimetry), thermogravimetric analysis (simultaneous thermal analysis), particle size and zeta potential analysis (Mastersizer and Zeta sizer), microscopic analysis (polarized light microscopy, confocal laser scanning microscopy, atomic force microscopy), and food texture analysis.
