3-4 Romaine lettuce leaves
½ red pepper, cut into thin sticks
1 carrot, cut into thin sticks
1 cucumber, cut into thin sticks
2 sheets of rice paper
1/2 tablespoon cilantro, chopped (optional)

Tips:
To prevent gummy rice paper, use warm water. Put the rice paper in the water for only a couple of seconds. Let the extra water drip off before putting the rice paper on a plate.
Use whatever fresh vegetables you have. You can also add meat, tofu, or rice noodles.
Dip rice paper in warm water (about 2-3 seconds). Let the water drip off the rice paper. Put on a plate.
Place 1 to 2 small pieces of lettuce on the rice paper closest to you.
Top with sticks of carrots, peppers, and cucumber. Add cilantro, if desired.
Fold the sides of the rice paper over the ends of the vegetables.
Bring the bottom of the rice paper over the vegetables and tuck under the vegetables. Continue to roll everything to the top of the rice paper.
Serve with peanut sauce, soy sauce, or hoisin sauce for dipping.
