Black beans (15.5 oz can)
2 cups frozen corn, thawed
2 cups salsa
2 tablespoons lime juice
2 teaspoons cilantro*, fresh
1 teaspoon cumin
1/2 cup green pepper, diced*
1/2 cup onion, diced**
*Younger children can chop the green pepper and cilantro with a table or plastic knife.
**Older children can help chop the onion with adult guidance

Measuring cups and spoons
Rinse beans.
Mix corn and black beans in a medium bowl.
Add salsa and stir.
Mix in the lime juice, cilantro and cumin. Stir together.
Add green peppers and onions. Stir.
Cool for 30 minutes or longer. Eat and enjoy!
You can eat green beans before they mature (get old) and hard. Open up a green bean and look on the inside. You will see tiny beans.
The record for the tallest bean plant is 46 feet and 3 inches. That’s as tall as stacking three giraffes on top of each other!

Kids need protein to help make their muscles strong. Beans are a great source of protein. You can add beans to foods your child already enjoys such as tacos, casseroles, salsa and even brownies! Start by adding a few beans at first and then add more. Tip: Try adding black beans to foods first. Because black beans are small and have a mild taste, children are often more willing to try black beans than other beans.

Supplies: plastic sandwich bag, paper towel or napkin, tape, a dried bean (Great Northern beans work well) or garden bean seeds.
Fold a paper towel small enough so it will fit into the sandwich bag.
Wet the paper towel. Press out any extra water. Put the wet paper towel in the bag.
Place a dry bean in the bag so you can see it through the plastic. Close the bag.
Tape the bag to a sunny window.
Check on the bean every day. In a few days, it will start to grow
