One Vegetable One Community - Child Care (OVOCC) strives to teach children in early care settings about healthy food by engaging providers, youth, and families in growing one vegetable. OVOCC has the potential to increase children's intake and willingness to try fruits and vegetables.

Spinach is the Vegetable of the Year for Childcare Settings in 2023!

Spinach is a type of leafy green vegetable, similar to chard or kale, which can be eaten raw or cooked. Spinach is easy to grow! It prefers cooler temperatures.  Spinach leaves will be ready to harvest about 40 days after planting. Spinach is easy to find in the grocery store year-round and can be purchased fresh, frozen, or canned.
