There are a few different events that can change the way we see a star. They are called "Variables" and they're separated into two, Intrinsic and Extrinsic

Stars that change due to pulses or through swelling and shrinking, they change because something internal in their own system.
Extrinsic
Extrinsic
Stars that change due to being eclipsed by stellar rotation or by another star or planet, they change because something extern of their own system
