A fun activity that can include the whole family is making use of our pizza oven. Ostuni market every Saturday hosts flour stalls where local producers can hand you the mysterious 'pizza mix', a special blend of two flours that promises some tasty pizza. We have a number of books dedicated to the art of pizza making or a number of online sources can guide you through the process. Alternatively, as we were not brave enough to venture blindly, a pizza master* came to Casa Amahoro and showed us exactly how to get the job done. Now that we do it on our own, I urge you not to worry about making the dough perfect as it always seems to work out in the end. Especially considering all the right ingredients and toppings can be found right on our doorstep.
The process of actually rolling out the dough, decorating the pizza, and baking it is where the fun really begins. You can gather the whole family around and combine whichever tastes of Puglia you so desire. It is also a process that happens very quickly; once the oven is heated up, a pizza can be rolled, decorated and ready to eat in less than ten minutes. Our new and improved workspace around the pizza oven allows a quick sequence of events to follow but if I were to offer one piece of advice it would be to flour every thing- every surface and tool if you want to avoid your pizza turning into a calzone.
