Although Matthias worked in hospitality as a barista for years, his passion and ambition for learning to create better and better food motivated him to take a step beyond the espresso machine.
At the beginning of 2022, he set his mind on the idea of a mobile pizzeria, and began his journey to perfecting the art of pizza making. After building a small woodfired pizza oven from scratch, Matthias soon discovered Neapolitan-style pizza, and determined that he would master it.

Matthias set out on his mission to create the best pizza in the North in mid-2022. Learning not just to work with dough, but also with steel, bricks, mortar and cement, Matthias built the large, trailer-mounted pizza oven which is central to the mobile pizzeria.
