Course Outline
This subject explores areas in emerging food trends that are centered and focused on the Food and Fibre Industry and how products are made for a Cafe. Students in this unit explore new concepts on how the Food Processing industry can work in preservation of foods, preparation, sensory perceptions and the creation of food solutions for healthy eating . Students will look at the aspects of Agriculture and different types of Cheeses ,Cereal & Grains ,Cocoa, Coffee & Teas , types of Sugars and Grape Growing which go towards making sweets ,cakes and pastries.Students will further will learn how to make different styles of coffees with alternative milks,Food Pairing and focus towards a final presentation of a High Tea. Students will continue to learn on safety and hygiene practices including storing food and food handling, budgeting money and planning food quantities, intolerances, allergies, dietary requirements and menu planning.
Students are to research ,design and present a food product centred on Food Development. This could be designing either a dessert,cake ,grain that they have chosen and embracing technology and social modern impacts . This builds student skill, knowledge and ability to generate a range of design options and decision making by following the design process; investigate, generate, collaborate, produce and evaluate. Students will display the product to the school community and receive feedback to improve the product.
Outcomes - On completion of this unit students will be able to:
Investigate and make judgements on how the principles of food safety, preservation, preparation, ,production,carbon footprint ,sensory perceptions influence the creation of food solutions for healthy eating when looking at different styles of Cafe trends.
Investigate design briefs to develop design ideas and to then budget, plan quantities for amount of people, produce and evaluate the design. This can be by designing bread/doughs/pastries from wheat and gluten free flours, different types of grains, cold sweets created from coffee & tea. Drying and preserving of fruits.
Food Production on how food manufacturing occurs from paddock to plate.How sustainable food is produced incorporating different forms of farming providing a range of food items to create a High tea to compliment a Cafe Culture menu
