Looking for a way to adopt a healthy eating choice and still enjoy something special. I decided to make a vegan chocolate cake, that can satisfies my sweet tooth and be nourishing. My vision was to renovate the beloved chocolate cake recipe by doing a plant-based variation. often times I don't reach for a vegan options but this week challenged me to step out of my comfort zone but still make something delicious.
In my effort to make the tastiest vegan chocolate cake, I decided to not use the term "Healthy" while I was searching. I wanted to start with a delicious "unhealthy" cake to start then make some substitutions. In this recipe I used applesauce as the eggs for the cake, and instead of frosting it, I used a light dusting of powdered surgar ontop. Although this may have seemed like an unhealthy option, I still thought it was better than smothering a mixture of butter and sugar (frosting) across all sides.
Although it was a challeneg for me to forget about all my usual fatty baking ingreidents. It was a good reminder than you can still enjoy sweet treats even while trying to be healtheir. This vegan chocolate cake is a proof to the fact that taking pleasure and care of ourselves are not contradicting one another. We can even form nicer complement between delightfulness to our body and soul.
1 1/2 cups all purpose flour gluten free, if necessary

1 cup granulated sweetener of choice * See notes

1/4 cup cocoa powder
▢
1 teaspoon baking soda
▢
1/2 teaspoon salt
▢
1 tablespoon apple cider vinegar
▢
1 teaspoon vanilla extract
▢
6 tablespoon unsweetened applesauce
▢
1 cup water
Preheat the oven to 180C/350F. Line an 8-inch springform pan with parchment paper and set aside.
In a large mixing bowl, combine your flour, granulated sweetener,cocoa powder, baking soda, and salt, and mix well.
Add your vanilla extract, apple cider vinegar, and unsweetened applesauce and mix well. Pour the water over the top and mix until fully combined.
Transfer the cake batter into the lined pan and bake for 25-30 minutes, or until a skewer comes out just clean.
Remove from the oven and let cool in the cake pan for 10 minutes, before carefully transferring to a wire rack to cool completely. Once cool, frost if desired.
