For the Pesto:
1 clove garlic roughly chopped
1 cup packed basil leaves
⅓ cup olive oil
Freshly ground pepper
3 tablespoons finely grated Parmesan or Pecorino Romano cheese
Kosher salt
For the sandwich:
2 slice Sourdough bread
1 tomato sliced
Fresh mozzarella
Arugula
Pesto
Balsamic glaze
For the pesto:
Roughly chop garlic
Place in the food processor until combined
Sandwiches:
Spread pesto on both pieces of bread. Place arugula, tomatoes, mozzarella and a sprinkle of salt and pepper. Drizzle a little balsamic glaze and top with the other piece of bread.
Heat a panini grill or grill pan and butter the outside of the sandwich. Grill until golden and serve.
