P: Program Mode
This is the best mode to start with. The camera sets the Aperture and Shutterspeed for you.
TV: Shutter Priority Mode
You set the shutter speed of the camera and it will choose the proper aperture for the exposure.
AV: Aperture Priority Mode
This is the mode I use the most. You set the Aperture and the camera sets the shutter speed. This allows you to control the Depth of Field in your photos.
