Bison (also referred to as Buffalo) is a tasty and lean choice for anything from snacks to gourmet meals. It does not have the "gamey" taste of wild meat. Bison is high in iron and calcium, low in cholesterol and fat. The American Heart Association recommends Bison meat as part of a healthy diet. Bison is non-allergenic and easier to digest by people with a red meat intolerance.
