Dirty Jerk Rice with Okra

Here's a delicious fusion of Southern and Caribbean influences! In a rice cooker, start 2 cups of rice with 1 Tbs. butter and salt to taste. Meanwhile, rub 2 large chicken breasts with several shakes of Jammin' Jerk (Caution! Wash hands thoroughly once done). Allow chicken to rest for 20-30 minutes. In a large skillet on high heat, combine the following ingredients:

3 Tbs. unsalted butter

1 large green pepper, diced

1 small onion, diced

2 cloves garlic, chopped

1/4 c. chopped chicken livers (can substitute portabella mushrooms for a similar earthy flavor in a pinch , we did!)

1 diced large tomato (we love the heirloom Brandywines from our garden!)

Cook until well browned. Dice chicken breast and add to skillet. Cook chicken thoroughly, then add 1 cup chicken broth. Stir in rice and simmer until mixture thickens. Serve with pre-packaged battered okra slices fried in oil!
