Pumpkin Bars

2 cups sugar

2 cups of Bisquick

1/2 cup vegetable oil

1/2 cup raisins

1 can (16 ounces) pumpkin

2 teaspoons ground cinnamon

4 eggs, beaten

Heat oven to 350. Grease jelly roll pan. 15-1/2 x 10-1/2 x 1 inch. Beat sugar, oil pumpkin and eggs in a large bowl on medium speed for 1 minute. Stir in bisquick, raisins and cinnamon. Pour into pan. Bake for 25 to 30 minutes; cool, frost with cream cheese frosting; sprinkle with chopped pecans, if desired.

Cream Cheese Frosting

1 3 ounce package of cream cheese, softened

1 tablespoon milk

1/3 cup butter or margarine, softened

1 teaspoon vanilla

2 cups powdered sugar

Beat cream cheese, margarine, milk and vanilla until creamy. Stir in powdered sugar until smooth and of spreading consistency.

Frosted Chocolate Drop Cookies

1/2 cup shortening

3 one ounce squares of chocolate

1 cup sugar

1 teaspoon vanilla

2 eggs

2 cups flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 cup milk

1/2 cup walnuts (optional)

1/2 cup raisins (optional)

Melt shortening and chocolate together. Add sugar and beat well. Add vanilla and eggs and beat well. Sift together four, soda, and baking powder. Add the dry ingredients and milk alternately,. Fold in nuts and raisins. Drop by teaspoonfuls onto a cookie sheet and bake in a moderate oven (350) for 12 minutes. When cool, frost with chocolate frosting. Makes 3-1/2 dozen 2 inch cookies.

Chocolate Frosting

2 tablespoons shortening

2 one ounce squares of unsweetened chocolate

1/4 cup water

1/4 teaspoon salt

1 egg yolk

1/2 teaspoon vanilla

1-1/2 cups sifted powdered sugar

Place shortening, chocolate and water in a saucepan and heat until the shortening and chocolate are melted. Mix in salt, egg yolk and vanilla. Add the powdered sugar and beat well.

Swedish Wedding Cakes

1 pound of margarine

4 cups of flour

10 tablespoons of powdered sugar

2 cups of chopped nuts

4 teaspoons vanilla

Combine, shape into balls. Bake in a 250 oven for 1 hour. Cool slightly, roll in powdered sugar.

Sweetie’s Ice Cream Christmas Sugar Cookies

1 cup powdered sugar (packed)

1 cup shortening (1/2 margarine)

2 cups flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/4 teaspoon salt

Mix the above ingredients with a pastry blender, then add the following:

1 beaten egg

1 teaspoon vanilla

Drop by teaspoonful on a greased cookie sheet and flatten with a glass dipped in flour. Bake in a 350 oven for 6 or 7 minutes.

Twila's Gingersnaps

3/4 cup shortening

1 cup brown sugar

1 egg

1/4 cup molasses

2 cups flour

1/4 teaspoon salt

2 teaspoons baking soda

1 teaspoon each: ginger, cinnamon and cloves

Combine shortening, sugar and egg and beat until fluffy. Add molasses and beat well. Sift drying ingredients together and add; mix well. Chill dough thoroughly. Shape into 1” balls and roll in granulated sugar. Place 2” apart on greased baking sheets. Bake at 350 for 12 to 15 minutes. Makes 4 dozen.

Peanut Butter Cookies

3/4 cup shortening (part butter or margarine)

1 cup peanut butter

1 cup brown sugar

1 cup white sugar

2 eggs

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

Combine in usual fashion. Roll into 1” balls and place on an ungreased baking sheet. Press down with tines of fork in a cross wise pattern. Bake in a 375 oven for 10 minutes. Makes 5 dozen.

Mom’s Oatmeal Cookies

1 cup brown sugar

3/4 cup shortening

1 cup flour

4 cups oatmeal

1/2 cup raisins

1 egg

1-1/3 cups of milk

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon each: cinnamon, nutmeg, salt and vanilla

Cream shortening and sugar. Add egg and beat well. Combine dry ingredients. Add to creamed mixture alternately with the milk. Stir in raisins. Let set awhile before baking. Bake in a 325 oven for 20 minutes.

Health Cookies

1 stick of butter or margarine (1/2 cup)

1/2 cup brown sugar

1-1/2 cups granulated sugar

1/2 cup peanut butter

2 eggs

2 cups flour

3 teaspoons baking powder

1/2 teaspoon salt

2 cups all bran

1 teaspoon vanilla

1 cup raisins

1/3 cup water

Bring 1/3 cup of water to boiling, add raisins and cool. Cream shortening and sugars. Add eggs and beat well. Stir in peanut butter. Combine dry ingredients. Add to creamed mixture alternately with the milk. Stir in raisin/water mixture. Allow the dough to stand for at least 1/2 hour before baking. Bake in a 375 oven for 10-12 minutes.

Mom’s Oatmeal Chocolate Chip Cookies

1 cup shortening

3/4 cup brown sugar

3/4 cup white sugar

2 eggs

1 teaspoon baking soda dissolved in 1 teaspoon hot water

1 teaspoon salt

2 cups uncooked oatmeal

1-1/2 cups sifted flour

1 teaspoon each: cinnamon and nutmeg

3/4 to 1 cup nuts

1 large package chocolate chips

Cream shortening and sugars. Add eggs and beat well. Stir in soda/water mixture. Combine dry ingredients. Add to creamed mixture. Stir in nuts and chocolate chips. Bake in a 375 oven for 10 minutes. Note: may substitute raisins for chocolate chips.

Aunt Mary’s Date Pinwheels

1 cup shortening

2 cups brown sugar

3 eggs, beaten

1 teaspoon vanilla

4 cups flour

1 teaspoon each: baking soda and baking powder

1/2 teaspoon salt

Cream the first four ingredients, then add the dry ingredients. Divide the dough into thirds, roll 1/4” thick.

Filling: 1 pound dates, (2-2/3 cups) chopped

1 cup nuts, chopped

1/2 can (4 ounces) candied lemon or orange peel

1/2 cup white sugar

1/2 cup water

Cook until thick, cool. Spread the filling over the rolled dough. Roll and chill overnight. Cut cookies 1/4” thick. Bake for 7 minutes in a 350 oven.

Sour Cream Sugar Cookies

2 cups sugar

1 cup shortening (1/2 butter or margarine)

4 egg yolks, well beaten

1 cup sour cream

6 cups flour (approximately, do not use more than necessary, it will make the cookies dry)

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon lemon flavoring

1 teaspoon vanilla

Cream the shortening and sugar. Add egg yolks, sour cream, lemon and vanilla flavorings. Sift the flour with the soda and baking powder and stir into the shortening mixture. Chill dough thoroughly. May roll the dough and cut into shapes or drop by teaspoons and press with a glass dipped in sugar. Bake in a hot oven (450 degrees) until slightly brown, 5-6 minutes. Makes 5-6 dozen.

Coconut Oatmeal Cookies

1 cup sifted flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup shortening

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 teaspoon vanilla

1 egg, unbeaten

3/4 cup quick cooking oatmeal

3/4 cup coconut

Preheat oven to 350. Sift together first four dry ingredients. Cream shortening and sugar; beat in vanilla and egg. Add flour a little at a time, beating well. Stir in oatmeal and coconut. Drop from a teaspoon, bake on an ungreased pan for 10-12 minutes. Makes about 30 cookies. (I usually double this recipe.)

Toffee Squares

1 cup butter

1 cup brown sugar (packed)

1 egg yolk

1 teaspoon vanilla

2 cups flour

1/4 teaspoon salt

4 Hershey's Bars

1/2 cup nuts (finely chopped)

Preheat oven to 350. Combine ingredients; spread on an ungreased cookie sheet. Bake 20 to 25 minutes or until lightly browned. While still warm, place squares of chocolate on dough. Let stand until soft, then spread and top with chopped nuts. Cut into 1" squares while still warm. Makes 6 to 7 dozen squares.

Spritz

1-1/2 cup butter

1 cup sugar

1 egg

2 tablespoons milk

1-1/2 teaspoon vanilla

4 cups flour

1 teaspoon baking powder

Cream butter and sugar; add remaining ingredients. Do not chill dough, use in a cookie press within 2 hours. Bake in a 400 oven for 6 to 8 minutes. Makes 6 dozen cookies.

Back of the Box Famous Oatmeal Cookies

1 cup firmly packed brown sugar

1/2 cup granulated sugar

3/4 cup crisco

1/4 cup water

1 egg

1 teaspoon vanilla

3 cups oatmeal

1 cup flour

1 teaspoon salt (optional)

1/2 teaspoon baking soda

Preheat oven to 350. Cream butter and sugar; add remaining ingredients. Drop dough by teaspoonsful on an ungreased cookie sheet. Bake for 11 to 13 minutes, until edges are brown. Makes 5 dozen cookies.

1 cup shortening

2 cups brown sugar (packed)

2 eggs

1/2 cup strong, cold coffee

3-1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon nutmeg

1 teaspoon cinnamon

2-1/2 cups raisins

Combine in usual fashion. Chill dough for at least one hour. Bake in a 400 oven for 8-10 minutes.
