Other substitutes that I found were totally inadequate, even the most popular one on the internet. This recipe is a nearly one-for-one replacement.
Black Pepper Marinade
works best on very good beef, 1 lb steak per batch of marinade
1 lb quality steak - we use prime only
1/4 cup course black pepper
1 tsp salt - I use kosher salt; be generous, a rounded teaspoon it OK
1 tsp garlic powder - as with salt, more is better so I use a rounded teaspoon. Can use 2-3 cloves of pressed garlic
1 tsp onion powder
1/8 tsp cumin
Options:
cayenne pepper to taste
paprika to taste
From the refrigerator, pierce the meat with a fork and marinade at room temperature for 1 hour, turning every 15 minutes. In hot climates you may need to marinade in the fridge.
