Caesar Dressing
I found this recipe on The Pioneer Woman's cooking website, and absolutely love it. It's very different from other Caesar dressings, mainly it being very lemony. Since the garlic in this recipe is raw, using too much garlic will over power the dressing. I use a garlic press for this recipe because the press produces the same, small consistency. The best thing about this recipe is that it's extremely simple to make, without the hassle of dealing with raw eggs. I find if you make this recipe with Miracle Whip it does not produce a good flavour. Real mayo is key! For the original recipe, click here.
Ingredients:
1 medium clove of garlic, crushed in a garlic press
1/2 cup of real mayo
Juice of 1/2 lemon
1/2 tsp of Worcestershire sauce
Directions: Whisk together all the ingredients until incorporated. If you like your dressing really lemony, add more lemon juice.
*If you like your dressing a little more salty, add a few more shakes of Worcestershire sauce.
For a great Caesar Salad:
In a bowl add some torn Romaine lettuce, baby spinach, green or red bell pepper and some freshly cooked bacon. Garnish with freshly grated Parmesan cheese, homemade garlic croutons, the homemade caesar dressing and a slice of lemon (optional).
