One of the biggest thrills I ever had was working in St. Augustine with a company that my Father used to work with as an Engineer. As time went on I began to appreciate the good people I worked with and the great experiences they brought with them from various regions of the country. It was those countless hours talking familiy traditions that I ended up tapping into life's hidden treasures of what it meant to slow-roast whole bulb garlic or saute fresh mushrooms.One of those finds was a recipe for Crab Cakes:
1 lb. crab meat
1/2 cup minced celery
1/2 cup minced onion
2/3 cup mayonnaise
1/4 tsp cayenne
3/4 tsp ground mustard
1/2 tsp white pepper
3 drops of hot sauce
1 tsp fresh lemon juice
1/2 cup plain bread crumbs
1/2 tsp paprika
Heat 1 tablespoon of oil. Saute onion and celery, cool. Mix oil above ingredients. Form into cakes. Coat with bread crumbs. Fry in oil, 4 minutes per side.
