My coworker was an inspiration for this recipe. Her and her husband are dedicated supporters of my special seasoning. One day she was telling me how the night before they had made some chili with my special seasoning. I was thinking she added to another chili seasoning pack. I was wrong. She said that she used just the 1 ounce pack of special seasoning. That got me to start creating. Know I needed to make a chili that was easy and quick but respected by the chili masters of the world. Once I created the final dish I let my biggest credits and got their opinion. Everyone who said that's it. So here you go. Oh the ketchup that was my sons idea and it made it get the that's it approval.

SERVINGS 6 / UNITS US
1 lb ground chuck or 1 lb ground turkey
1 Sweet onion, diced
1 green pepper, diced
1 (14 ounce) can stewed tomatoes
1 (1/2) cup of ketchup
2 tablespoons chili powder
2 (1 ounce) Montego's Special Seasoning add a second pack for a extra spice
1 (14 ounce) can kidney beans, drained and rinsed
1 cup water
Directions:
Cook ground meat. Mid way through as the meat is cooking mix in 1/2 package of Montego's Special Seasoning and the two table spoons. If the grease from the meat is not your thing then before adding the seasoning you should drain your grease.
Dice both the onion and the pepper. With your choice of oil you use to saute take your onion and start to caramelize it. Mid way through add your peppers. Once your onion has caramelized add the other 1/2 of Montego's Special Seasoning, bell pepper and onion saute to your ground meat.
After you stir in your onions and peppers to your ground meat you need to turn your stove top eye to medium(high if you are in a rush). You then want to add your Kidney beans. Make sure to stir the beans through out the entire contents of the ground meat. I like doing this to let the two together in a loving way.
After a good stir you then will add your can of stewed tomatoes. Again stir the tomatoes completely through the chili. Let the tomatoes get to know the dish they are merged with add the last 1 ounce package of Montego's Special Seasoning. Lastly add a can of water. Of course stir all the way through. (If you like your chili thick you want to make a thinking and add it know).
Finally when you take a test taste and it is to your liking. It's time to let it sit and come together in a melody of excitement for your taste buds. So cover and simmer for 1-2 hours. Always check to make sure that it's not to high and boiling away. After finished cooking just bowl and top to your liking and enjoy.
