This is how I make Kefir. As I share kefir grains with people in other climates/altitudes I am discovering that describing the process in terms of hours or days is insufficient. My approach focuses on the Appearance and Flavor of Kefir in order to help describe when it's Kefir. I will try to explain how to make Kefir based on what you should be looking for and let you figure out fermentation schedule that works best for you.
