The Rosewood Hotel’s pedigreed food and beverage team delivered a one of a kind holiday menu. Both Executive Chef, Reylon Agustin and Executive Sous Chef, Michael Daley who have both previously prepared La Chaine dinner events are proud to share with you that all produce served at our dinner will be fresh from that morning’s Farmers Market, and that almost all other ingredients come from California farmlands.
All dishes were paired exquisitely with wines by Paul Mekis credentialed advanced sommelier -- one of only a few in the world -- Director of Wine, Rosewood Hotels & Resorts.

Executive CHEF, Reylon Agustin
Reylon Agustin a California native, has been instrumental in establishing Madera as one of the leading culinary destinations in the Bay Area. Agustin draws inspiration from the region's bountiful fresh produce and artisanal products and previously served as Rosewood Sand Hill's Executive Sous Chef.
With a career spanned across the U.S and U.K, Chef Agustin has held leadership positions at several acclaimed restaurants including Executive Chef of Presidio Foods in San Francisco with Traci Des Jardins, Executive Sous Chef at The Ritz Carlton, Fort Lauderdale and Chef de Partie at Restaurant Gordon Ramsay in London. Agustin is a graduate of the California Culinary Academy
CHEF de Cuisine, Michael Daley
Michael Daley is no stranger to the Bay Area food scene, he joins Rosewood Sand Hill after serving as the executive chef at Mourad where he helped secure the restaurant's Michelin star for two consecutive years.
With previous experience managing operations as Executive Sous Chef for ‘The Little Nell’ in Aspen and The Ritz-Carlton's in both Lake Tahoe and Bachelors Gulch, Daley aims to create an immersive culinary experience that transports guests through carefully crafted dishes and foraged ingredients. Daley holds an Associate’s Degree in Culinary Arts from the New England Culinary lnstitute.
DIRECTOR of Wine, Paul Mekis
Paul Mekis is a credentialed advanced sommelier - one of only a few in the world - and Director of Wine, Rosewood Hotels & Resorts.
He began as a wine steward in 1986, and honed his tasting and service skills under the tutelage of Master Sommelier Ronn Wiegand and Nunzio Alioto. Mekis' impressive resume includes some of the best-known and revered restaurants in San Francisco and the Bay Area, including The Lark Creek lnn, Cypress Club, Aqua and the Plumed Horse.
Over the course of his career, Mekis has served as a wine judge, educator and representative for America at wine tastings throughout Europe, South America, and South Africa.
