Content includes identification and definition of the nutritional components of food; elements of digestion, metabolism and energy management; consideration of nutrition requirements for each age group and health problems related to diet. To assess the general education goal for scientific reasoning, specific exam and quiz questions, determined by faculty, are used in each section of the course.
The dietary analysis project is a cumulative assessment of course goals and is used to assess the general education goal for critical thinking.
Course Requirements: Completely Online course.
The course will use D2L to facilitate the learning experience. Students are encouraged to participate and email the instructor with any questions before, during and after class.
Can I use an used textbook from a friend?
If you use the old textbook, you will have to buy an access code for $16 additionally.
