This simple and delicious recipe is perfect for gatherings or a tasty snack!
To make the guacamole, gather 3 medium-sized avocados (crushed), a handful of cherry tomatoes (diced), a lime (juiced), and a jalapeño (finely diced without seeds) from the garden. Additionally, you will need 1/2 of a yellow onion (finely diced), 3 tablespoons of chopped cilantro, 2 garlic cloves (minced), and a pinch of salt. Mix all of your ingredients in a bowl.
To make the pico de gallo, you will need tomatoes (diced into cubes) and lime from the garden. Additionally, you will need cilantro (chopped) and onions (diced into cubes). Jalapeño peppers, which are also found in our garden, can be added for a spicy taste (finely dice them and remove their seeds). Traditionally, it is made with equal parts tomato and onion, but you can also adjust the recipe to your preference. To make the Pico de Gallo, combine and mix all of your ingredients and add a squeeze of lime juice. Season it with salt and pepper, and we recommend leaving it in the fridge overnight so it will be more flavorful!
Serve with tortilla chips or as a side or condiment on your tacos or burritos!
To make this salad, you will need to make 2 main components: the salad itself and the dressing!
To make the salad, combine different ingredients from the garden, such as kale, lettuce, tomatoes, arugula, chard, peppers, avocado, and celery.
You can add additional toppings, such as croutons, proteins (chicken, eggs, etc.), cheese, nuts, herbs, legumes, onions, and more!
Lastly, add the dressing. You can make your own dressing by whisking olive oil, white vinegar, salt, and pepper together using a fork or shaking it in a small jar. For a garlicky flavor, you can also add finely minced garlic or garlic powder to the dressing. Then, add finely minced fresh herbs like dill or parsley.
Finally, add our dressing and mix the salad well. Serve this salad fresh, and it can act as a main dish or a side dish that can be enjoyed with a variety of entrees.
