Hands down, my favourite textbook for sound for film is 'Producing Great Sound for Film and Video' by Jay Rose.
It's practical, up-to-date, easy to read and written by a practitioner from industry - it has a million fabulous sound tips and tricks. I can't recommend it more highly. It is fantastic. Read it online through the SAE library.
