Introduction
Tell students there is an official job which includes sampling new vegetable and fruit varieties before seeds are sold to farmers and gardeners. Today, they will act as taste testers of a variety of fruits and vegetables. As they taste, have them fill out this sheet.
Have a variety of fruits and vegetables for students to sample. See if you can have each color represented by two options.
Introduce the idea of 'eating the rainbow.' Ask students to explain what that phrase might mean. Then, ask them to share ideas of why they think eating the rainbow might be a good thing.

Read Oliver's Vegetables (read aloud here) or Tops and Bottoms (read aloud here) and then enjoy a salad.
Try pickling the rainbow! Choose vegetables in as many colors as you can (and would enjoy eating!).
Young students can be encouraged to choose a new veggie to add to lunch or dinner at least once a week! Bonus points if they help you prepare it.
Older students can create a menu for a week that includes a variety of fruits and vegetables.
Oldest students can write a response to the question: Why is it important to eat the rainbow? They can use this list of veggies and their benefits as a resource.
