Try this at Home: Zucchini Chips*
*Parents will need to help make this due to either prepping or cooking instructions*
1-2 Zucchinis
1 Cup of Flour
1 Cup of Panko or Bread Crumbs
3 Large Eggs
Vegetable Oil for Frying
Preheat oil to about 350 degrees over medium-high heat.
Cut the Zucchini into chips about 1/4 inch thick.
Dredge the zucchini chips. Toss them in flour, soak them in the egg, and then toss them in the breading.
Repeat Step 3 until the chips have been prepped and placed to the side before frying.
Carefully place them into the hot oil, a few at a time, until then begin to turn golden.
Remove from the oil in batches placing them on paper towel or parchment paper.
*Optional* Sprinkle parsley and Parmesan cheese over the chips before eating
*Served best with ranch or marinara sauce for dipping*
