Ingredients

  • 2 tablespoons olive oil

  • 3 leeks, cleaned, thinly sliced

  • 1 onion, medium dice

  • 2 cloves garlic, minced

  • 6 potatoes, peeled and small dice

  • 3 cups low-sodium vegetable broth

  • 1 cup low-fat milk

  • Salt and pepper to taste

Directions

  1. In a large pot, heat the oil over medium heat.

  2. Add the leeks, onions and garlic. Cook until they are soft, about 10 minutes, stirring often.

  3. Add potatoes to the pot and cover with broth.

  4. Cook over medium heat until the potatoes are soft, about 25 minutes.

  5. Use a potato masher or fork to break up the potatoes.

  6. Reduce the heat to low and add the milk, cook for another 5 minutes, stirring often.

  7. Serve and enjoy!
