Ingredients
2 Tablespoons vegetable oil
3 garlic cloves, minced
½ cup carrot, medium dice
½ cup onion, medium dice
½ cup celery, medium dice
¼ head cabbage, shredded
1 can (15 ounces) garbanzo beans, drained and rinsed
1 can (15 ounces) diced tomatoes
4 cups (32 ounces) low-sodium broth*
1 cup elbow pasta**
1 teaspoon Italian seasoning
Salt and pepper to taste
Directions
Heat oil in large soup pot on medium heat, add garlic, carrot, onion, celery, and cabbage, and cook for 8 minutes until vegetables are soft.
Add garbanzo beans, diced tomatoes, pasta, seasoning, and broth.
Bring to a boil. Turn heat down to low and simmer for 15 minutes.
Serve and enjoy!
*Can use low-sodium chicken, turkey, beef, or vegetable broth.
**Can use any shaped pasta.
