Ingredients

  • 2 Tablespoons vegetable oil

  • 3 garlic cloves, minced

  • ½ cup carrot, medium dice

  • ½ cup onion, medium dice

  • ½ cup celery, medium dice

  • ¼ head cabbage, shredded

  • 1 can (15 ounces) garbanzo beans, drained and rinsed

  • 1 can (15 ounces) diced tomatoes

  • 4 cups (32 ounces) low-sodium broth*

  • 1 cup elbow pasta**

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

Directions

  1. Heat oil in large soup pot on medium heat, add garlic, carrot, onion, celery, and cabbage, and cook for 8 minutes until vegetables are soft.

  2. Add garbanzo beans, diced tomatoes, pasta, seasoning, and broth.

  3. Bring to a boil. Turn heat down to low and simmer for 15 minutes.

  4. Serve and enjoy!

*Can use low-sodium chicken, turkey, beef, or vegetable broth.

**Can use any shaped pasta.
