Ingredients
1 tablespoon olive oil
1 cup onion, minced
½ cup carrot, minced
½ cup celery, minced
2 tablespoons flour
2 cups low sodium chicken broth
2 cups 2% milk
6 cups broccoli, chopped
4 cups cheddar cheese, shredded
Salt and pepper to taste
Directions
In a pot, heat oil over medium-high heat. Add onions, carrots and celery and cover. Cook for 8 minutes until vegetables are soft.
Stir in flour to coat the vegetables, continue to stir and cook for one minute.
Slowly add the broth and milk, stirring constantly.
Add broccoli, and cook for another 5 minutes, occasionally stirring.
Add cheese and let it stand for a minute. Stir to combine cheese with the broth. Cook for 3 minutes, do not let soup boil.
Season with salt and pepper, cooking for 2 more minutes. If soup becomes too thick, you can thin it out by adding more milk.
