Ingredients

  • 1 tablespoon olive oil

  • 1 onion, medium dice

  • 2 cloves garlic, minced

  • 1 can (15 oz) corn, drained and rinsed

  • 2 red apples, small dice

  • 1/2 tablespoon cumin

  • 1/8 teaspoon cayenne pepper

  • 1 can (15 oz.) black beans, drained and rinsed

  • 1 can (4.5 oz.) of diced green chiles, drained

  • 1 box (32 oz.) low-sodium vegetable broth

Directions

  1. In a large pot, heat oil over medium heat. Add onions and garlic and sauté until soft.

  2. Add corn and sauté until golden brown. Add apple, cumin and cayenne pepper. Cook about 3-4 minutes.

  3. Set aside 1 cup of the mixture. Puree remaining mixture in a food processor or blender, adding some of the broth (or water) if needed, and return to pot.

  4. Add the black beans, chiles, the mixture that was set aside and the remaining broth. Bring to boil and reduce heat to a simmer for about 15 minutes.

  5. Enjoy!
