4 cups vegetable stock
1 butternut squash, peeled and large diced
1 tablespoon olive oil
2 tsp. garlic powder
Salt and pepper to taste
In a large pot, combine stock and butternut squash and turn heat to medium-high.
Cover with a lid and cook until squash is cooked through.
Drain squash and set aside in a bowl.
Add olive oil, garlic powder, salt and pepper and mash.
Taste and adjust for flavor.
Serve with desired toppings and enjoy!
