2 cups cooked chickpeas (Garbanzo beans)
1/2 cup red onion
1 cucumber diced
1/3 cup chopped bell pepper
2 tomatoes chopped
1 tablespoon chopped fresh
1/3 cup vinegar
1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
In a large bowl combine chickpeas, onion, cucumber, bell pepper, and tomatoes.
In a small bowl, combine oil, vinegar, oregano, salt and pepper.
Add oil and vinegar dressing to chickpea mixture and mix well.
Serve immediately or chill before serving.
Refrigerate leftovers.
