1 whole wheat flour tortilla
1 Tablespoon hummus
¾ cup zucchini, peeled into strips with a peeler
2 Tablespoons shredded cheese (cheddar, pepper jack, mozzarella, or any other cheese)
Salt and pepper to taste
In a small bowl, combine the broccoli slaw with lemon juice, a pinch of salt, and a pinch of pepper and set aside.
Spread the hummus on the tortilla, then add the strips of zucchini, followed by the broccoli slaw.
Top with cheese
