2 Tablespoons olive oil
2 sweet potatoes, peeled, medium dice
1 large carrot, peeled and grated
1 red bell pepper, thinly sliced
1 onion, thinly sliced
1/4 cup low-sodium soy sauce
1 Tablespoon honey
2 teaspoons sesame oil
1 Tablespoon rice wine vinegar
1 Tablespoon Sriracha or chili paste (or 2 teaspoons red pepper flakes)
1 Tablespoon cornstarch
1 Tablespoon water
3 green onions, cut into 2-inch pieces
2 teaspoons toasted sesame seeds (optional)
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sweet potato. Cook for about 10 minutes, until sweet potato is starting soften.
Add the remaining oil in the pan, then add onion, peppers and carrots. Sauté until onions start to soften, about 3-4 minutes
Turn heat down to medium-low. Mix in soy sauce, honey, sesame oil, rice wine vinegar and Sriracha.
In a small bowl, combine corn starch and water, then add to pan. Mix well with ingredients, until evenly coated. This will help make a thicker sauce.
Remove from heat, top with green onions, sprinkle with sesame seeds (optional), and enjoy!
