1 tbsp olive oil
1 small yellow onion (chopped)
1 green bell pepper (cored, de-seeded and chopped)
2 jalapeño peppers (de-seeded and finely chopped)
4 cloves garlic (finely chopped or 1 teaspoon garlic powder)
1 pound ground turkey
1 28oz can diced tomatoes with juice
1 15oz can pumpkin puree
1 15oz can kidney beans or cannellini bean
1 15oz can black beans
½ - 1 cup broth (vegetable or chicken)
2 teaspoon cumin, ground
1 tbsp chili powder
2 tsp cinnamon
Salt and pepper
Heat oil in a large pot over medium high heat.
Add onion, bell pepper, jalapeños and garlic and cook, stirring frequently until tender, about 5 minutes.
Add turkey and cook until browned.
Add tomatoes, pumpkin, water, chili powder, cumin, cinnamon, salt and pepper and bring to a boil.
Reduce heat to medium low then add beans.
Cover and simmer, stirring occasionally, for 30 minutes more.
Ladle chili into bowls and serve. Enjoy!
