1.5 pounds chicken breast, large dice
2 teaspoon vegetable oil
6 cups broccoli, chopped, stems and florets separated (about 1 large crown)
1/2 cup water
1/2 cup peanut sauce (See Recipe)
Salt and Pepper to taste
Cilantro, roughly chopped (optional)
Lime, cut into wedges (optional)
Peanut Sauce
1 jalapeño pepper, minced
1 teaspoon Sriracha
3 cloves garlic, minced
1 shallot or small onion, minced
1 teaspoon vegetable oil
1/2 cup to 1 cup canned (15 oz) full fat, unsweetened coconut milk
1/2 cup peanut butter (or any alternative nut butter)
1 tablespoon soy sauce
1 tablespoon brown sugar
Place a large pan over the medium-high heat and add 1 teaspoon of vegetable oil.
Once hot, add the broccoli stems. Cook for about 3 minutes, stirring occasionally.
Add the tops of broccoli and 1/4 cup of water and cover the pan.
Once broccoli has become bright green and slightly tender, remove it from the pan.
Add the remaining teaspoon of oil to the pan and add the chicken. Cook for about 5 minutes and then add the remaining water to the pan.
Stir the chicken occasionally and cook until it has reached an internal temperature of 165 degrees.
Add the peanut sauce and stir to coat the chicken.
Once the chicken is coated, pour broccoli back into pan and mix. Taste and adjust seasoning as needed.
Serve on top of rice, and top with cilantro and a squeeze of lime!
Peanut Sauce
Heat a small saucepan over medium heat. Add oil.
Once oil is warm, sauté the jalapeño, garlic and shallot (or onion) until fragrant, about 2-3 minutes.
Add the 1/2 cup of coconut milk and Sriracha, whisk well.
Bring sauce to a boil, then quickly turn the heat down to low.
Whisk in the peanut butter, soy sauce, and brown sugar. If the sauce is too thick, add more coconut milk to thin it out.
Taste and adjust seasonings as needed.
