1 can (15 oz.) black beans, drained and rinsed
1/2 cup red bell pepper, small dice
1/2 cup onion, small dice
1/2 cup corn, fresh, frozen or canned
1 can (20 oz.) diced pineapple, drained
2/3 tablespoon cilantro, chopped
2 tablespoons green onion, thinly sliced
1/4 cup Southwestern salad dressing (or ranch mixed with 1 teaspoon of chipotle-style seasoning)
8 leaves of Bibb lettuce, washed (or a lettuce like iceberg or romaine)
1/2 cup carrots, shredded
Combine black. beans, red pepper, onion, corn, cilantro, green onion and pineapple in a bowl and toss with salad dressing.
Spoon mixture into lettuce cups and top with grated carrots!
Enjoy immediately.
If preparing this recipe to eat at a later time, keep filling separate from lettuce until ready to eat.
