1 small onion, minced or small dice
1 can (15 oz) tomato sauce
10 oz. frozen chopped spinach or 8 oz. fresh spinach, roughly chopped
1 can (15 oz.) diced tomatoes, drained
¼ tsp. garlic powder
¼ tsp. oregano
½ tsp. dried basil
1 ½ cups water
1 box par-cooked (or “oven ready”) lasagna noodles
1 cup not-fat cottage cheese
1 cup part-skim Mozzarella cheese, shredded
Salt and pepper to taste
Heat a large skillet over medium heat. Add onion, tomato sauce, diced tomatoes, spinach, water, and spices to the skillet and bring to a boil.
Once boiling, reserve 1 cup of the sauce mixture and put aside. Give the sauce a quick stir and then reduce heat if needed.
Place a layer of noodles on top of the sauce. Cover and simmer for 5 minutes.
Spoon some of the reserved sauce over the first layer of noodles, then spoon cottage cheese and sprinkle mozzarella over the first layer of noodles. Repeat with remaining noodles, sauce, and cheeses.
Cover and simmer for 10 minutes. Add water if the mixture becomes too dry.
Once noodles are cooked and cheese has melted, turn the heat off.
Cut into squares and serve!
Refrigerate any leftovers.
