1 cup spinach
2 Tablespoons lemon juice
¼ cup olive oil
2 Tablespoons rice wine vinegar
Salt to taste
Fresh vegetables for dipping (Carrot sticks, celery sticks, broccoli, cauliflower, or cherry tomatoes) or you can also serve with whole-wheat crackers, baked chips, or on whole-grain toast.
Place all ingredients in a blender or food processor.
Blend on high until smooth, about 2 minutes.
