3 Tablespoons peanut or almond butter
3 Tablespoons honey
1 mashed banana
1 1⁄4 cups quick oats
1⁄4 cup semi-sweet mini chocolate chips
1⁄4 cup shredded coconut, unsweetened
1 teaspoon of cinnamon
Pinch of salt
Put the nut butter and honey in a microwave safe bowl and cook until the nut butter has melted and the honey is liquidy, about 30 seconds.
In a separate bowl combine the melted mixture and the remaining ingredients, and mix well.
Use a table spoon to scoop out the dough, roll into balls and press down to form “cookies”.
Cover with plastic wrap and refrigerate for at least an hour. Store in an air tight container for about two days.
