The chemical in this story is Beta Carotene, an organic pigment found in many fruits and veggies. In this case, the veggie was zucchini! Beta carotene gives the inside of zucchini its distinct yellow/orange color, and turns into vitamin-A when consumed by humans. Vitamin-A is essential for our well being, and is also proven to help eyesight! This is why your parents have always told you about how carrots help eyesight. It's because carrots contain beta-carotene! I chose this chemical in particular not because it is unique to the zucchini, but quite the opposite. Like I said, my mom loved to cook. She liked cooking healthy, and with as many organic ingredients as possible. Since beta-carotene is present in many natural fruits and veggies, I thought that it was a perfect chemical that could represent my mom and her strong love for cooking healthy.Â
