NCSU Student Leaders

Read below to learn more about our amazing NCSU students who are currently working to fight food insecurity on campus and in their communities.

Cole Lee

Cole is a senior majoring in Agroecology and Sustainable Food Systems. He is interested in intersection and is currently researching the history of land grant universities for his minor in extension education. He was formerly a farmhand at the Agroecology Education Farm, and this semester his favorite course has been Abolitionist Futures.


Mary Champlin

Mary Champlin uses she/they pronouns and is a current senior studying Agroecology at NC State. They are on the leadership team for both the Agroecology Club and the Feminist Collective where they enjoy working together with other like minded students on social justice and gender equity related issues. Mary studied as an Appalachian Food Justice Fellow through the West Virginia University Food Justice Lab, and she has worked as an assistant grower at a local urban Raleigh farm. Currently they are developing a food justice college curriculum for NC State and working on an independent food sociological research project. Mary is looking forward to talking with other students about food justice at the EJS!


Juhi Dattani

Juhi is a third year student studying Agroecology and Community Foods Systems and minoring in Spanish. Juhi is a first semester Steward, and she is so excited to help be a part of the symposium! Juhi enjoys cooking, volunteering at local gardens or animal shelters, and picking up the guitar!


Mary Grace Phillips

Mary Grace Phillips is an Agroecology and Sustainable Food Systems major with a concentration in Community Food Systems. She is currently working at the Interfaith Food Shuttle as a Community Health Education (CHE) Assistant through her internship with AmeriCorps. As part of her internship, Mary Grace is working on the FAERS program at the Interfaith Food Shuttle that focuses on increasing food access and education for African American and Hispanic diabetic seniors living in rural areas of Johnston and Chatham counties. She has also worked and volunteered at the NC State Agroecology Farm. When she is not working or going to school she enjoys hiking, reading, and cooking.

Andrea Padilla

Andrea is a senior at NC State, majoring in Agroecology and Sustainable Food Systems. She is a research assistant at the Center for Environmental Farming Systems; conducting research on the resilience of NC's local food systems during the COVID-19 pandemic. She is an organizer at El Pueblo where she focuses on undocumented immigrant rights. Andrea is applying her passion for soil health, climate change mitigation, and intersectional environmentalism through her involvement in various projects and as a part of the Agroecology Club. She's eager to build food sovereignty with other students at EJS.
