Spinach

spinach, also know as Spinacia Oleracea, is part of the the amaranth family

Spinach was first considered a crop in the 1920s due to a high amount of Iron and Vitamin A

Varieties:

  • Savoy Spinach
  • Semi-savoy Spinach
  • smooth leafed Spinach

Spinach requires full sun or partial shade and rich soil. It is best to grow in the spring due to the temperature. Plant the seeds 1 inch from the soil and water regularly.

It will usually be available to harvest in 4-6 weeks.

Some pests and diseases to look out for while growing Spinach are downy mildew and fusarium wilt.

Spinach is high in fiber and water, both of which help prevent constipation

One delicious dish using spinach is Sauteed Spinach

Ingredients:

  • 1 tablespoon Olive Oil
  • 1 medium white onion chopped
  • 1 tablespoon unsalted butter
  • 1 teaspoon soy sauce
  • 8 oz fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Along with Vitamins A and B, Spinach has a lot of Calcium which makes your bones get stronger and prevent Osteoporosis.
