A coffee cake is a sweet cake that pairs well with coffee or tea. This pastry can be eaten at any time but is typically served during breakfast and brunch

Ingredients
⅓ cup pumpkin puree
½ cup vegetable oil
⅔ cup plant-based milk*
1 and ½ teaspoons vanilla extract
1 and ½ cups all-purpose flour
½ cup granulated sugar
1 and ½ teaspoons baking powder
¼ teaspoon salt
1 tablespoon of pumpkin spice powder* (split equally in two)
⅔ cup packed brown sugar
2 teaspoons margarine melted
Instructions
Preheat oven to 350°F. Grease, or apply parchment paper to, an 8-x-4-inch loaf pan and set aside.
In a large bowl, mix together pumpkin puree, vegetable oil, milk and vanilla extract.
In a medium bowl, mix together flour, granulated sugar, baking powder, salt and half of the pumpkin spice powder.
Add dry ingredients to wet ingredients and mix until fully combined. Pour half of the mixture into the prepared loaf pan.
In a medium bowl, combine the other half of pumpkin spice powder and brown sugar. Mix well.
Spread half of the cinnamon sugar mixture on top of the batter in the pan. Then, pour remaining batter over the cinnamon sugar layer. Sprinkle remaining cinnamon sugar mixture on top.
Pour melted margarine over top of the prepared cake.
Bake for 35-40 minutes.
Remove from the oven and serve warm.
Notes
Oat milk is the ideal plant-based milk for the recipe. Other plant-based milks may be used instead to attain similar results.
In place of pumpkin spice powder, pumpkin pie spice, chai spice or cinnamon powder can be used to attain similar results.

1 apple*
Cinnamon powder
Honey
1 Puff pastry sheet
¼ cup milk, melted butter or egg wash mixture*

Instructions
Preheat the oven to 355°F. Apply parchment paper to a 9-x-13-inch quarter sheet pan* and set aside.
Core and thinly sliced apple. Lay out in a fan shape. (Image 1)
Cut the puff pastry sheet into 4 squares large enough to cover the fanned out apple. (Image 2)
On a sheet pan, layer ingredients. A pinch of cinnamon, drizzled honey, fanned out apple and pastry sheet in that order. (Image 3)
If desired, make a design on or poke holes into puff pastry. (Image 4)
Flatten puff pastry to the pan with fingers.
Lightly brush the top of the puff pastry with milk, melted butter or egg wash mixture.
Bake for 20-30 minutes or until puff pastry is golden. (Image 5)
Remove from the oven and pull pastry off of parchment paper. Serve warm.

Notes
Honey crisp and golden delicious apples produce the best results when baked, however, any apple can be used.
An egg wash mixture is a combination of egg and water. Egg wash mixture, melted butter or milk is brushed on top of the pastry to give the outside a flakier texture and golden appearance.
Any size sheet pan can be used for this recipe.
