Engineering like Arts tends to be integrated into tasks. It rarely makes sense to engineer without a context. However, there are days where a quick engineering focus could be a great way to have fun and make it a little more meaningful.
In STEM BINS are great ways to put together STEAM ideas as independent practice or a quick pull-out when you need it type of activity! One of my favorite activities is DaVinci's Bridge. Fair warning they will want to look it up.
Cheap, incredibly satisfying and kids love it. We have built circular towers and pyramids and everything in between. Sometimes they have a goal of reaching the ceiling. There are constraints you can add to this to make this more interesting and difficult. Imagine if you built the tower and then challenged them to program and fly a drone through without knocking it over!
Paper Shoes: Recently this challenge was suggested by a teacher in the TII group. The students were tasked with making a shoe of paper (which was the mistake copy paper), and masking tape. They had to make a matching set and walk a specified distance without breaking. I had one student smugly attempt this and was able to create the shoes but it did take them a bit of time.
Extension Accessibility challenges: This area can get touchy for some people. However, when you relate the challenge to animals it becomes a little less charged. Shortly after the shoe activity, I ran across a Facebook post about a bird with legs that were malformed. The veterinarian made tiny snow shoes for the bird so it to be able to walk! You can find connections in the animal world that can address real-world human issues.

This little mockingbird doesn't have a name. It was recently rescued by the California Wildlife Center. The shoes helped to realign its feet, getting them back to the normal foot shape for a bird. After just one week, the bird’s feet were fixed and he was able to walk around on his own...
