Pasta Salad
Ingredients
1/2 medium red onion, finely chopped
8 oz dried short pasta such as rotini
1/2 cup of baby tomatoes, halved
1/2 cup mixed peppers, thinly sliced
1 cucumber, quartered and thinly sliced
1 cup of cheese
1/4 cup parsley
A pinch of salt
Method:
Cook the pasta. Bring 2 quarts of salted water to a boil in a large pot over medium-high heat. Add 8 ounces pasta and cook until al dente — soft with just a bit of chew — about 8 minutes or according to package directions. Meanwhile, prepare an ice bath in a large bowl.
Quickly cool the pasta. Drain the pasta in a colander and run under cold water. Dunk the colander in the ice bath and set aside to cool for 5 minutes.
Place the pasta salad ingredients in a bowl. Drain the pasta well. Transfer to a large bowl. Add 1/2 a cup of baby tomatoes, sliced in half, 1/2 a cup green, yellow and red peppers, thinly sliced, 1 cucumber, quartered and thinly sliced, 1 cup of cheese, 1/4 a cup parsley
Toss the pasta with the dressing. Add the dressing, including the onions, to the pasta and toss until evenly combined.
Chill for 30 minutes before serving
This week, the children in Cookery Club practise their cutting skills. The children chopped and/or mixed all the vegetables with the pasta. A few were excited to taste test their pasta salads. Great work this week!

1 apple, peeled and cut into small slices
1 tbsp water
1/2 tsp cinnamon
1 tbsp jam
2 tbsp plain flour
2 tbsp oats
1 tbsp cold butter, cubed
1 tbsp brown sugar
Big cook, little cook
