One Vanilla Cupcake
Ingredients
1 tbsp unsalted butter, melted (non-dairy alternative: vegetable oil)
1 tbsp granulated sugar
1 tbsp egg white (non-dairy alternatives: yoghurt or apple puree)
1 tsp vanilla extract
2 tbsp self-raising flour
1 tbsp milk
Method:
Arrange a rack in the middle of the oven and heat to 180°C. Stack 2 cupcake liners together inside a small, oven-safe ramekin.
Whisk together the melted butter, sugar, egg white, and vanilla extract in a small bowl until smooth.
Add the self-raising flour and mix with a spatula until mostly smooth.
Gently stir in the milk, being careful not to over mix.
Pour the batter into the prepared liner. The liner will be quite full. Bake until the cake is golden brown and springs back when touched. This should be approximately 18-20 minutes.
Allow the cupcake to cool completely on a wire rack whilst preparing the icing.
Beat the powdered sugar, butter and vanilla together in a small bowl with a wooden spoon until smooth. You can do this by hand, but it will take at least 5 minutes of mixing to get a smooth mixture.
Ice the cupcake and decorate with sprinkles, if using.
This week, the children in Cookery Club made cupcakes. They worked really hard measuring and mixing their cupcake recipes.

Microwave-safe mug or bowl
1 tsp unsalted butter, plus more for coating the dish
6 large marshmallows, or 1/2 cup mini marshmallows
1 cup toasted rice crisp cereal, such as Rice Krispies
